Chicken Piccata with Tri-Colored Farfalle Alfredo

Golden cutlets meet a bright lemon-caper pan sauce over ribbons of creamy tri-colored farfalle.

The story

Chicken piccata looks fancy, but it is really a lesson in trusting your own pan. You pound the chicken thin so it cooks fast and stays tender, sear it until the crust turns golden, then build the entire sauce in the same skillet using the browned bits left behind. Those bits are pure flavor, and nothing you add later can fake them.

The piccata sauce is a study in balance: sharp lemon, briny capers, and rich butter all pulling against each other until they land somewhere bright and glossy. Whisking the cold butter in off the boil is the classic move that gives the sauce its silky body without breaking it.

Serving it over farfalle alfredo turns a light Italian trattoria dish into something that eats like a full dinner. The creamy pasta is the calm center, the piccata sauce is the spark, and together they make a plate nobody leaves hungry from.

How to make it

  1. Halve each chicken breast horizontally, then pound the pieces to an even 1/4-inch thickness. Season both sides with salt and pepper and dredge in the flour, shaking off any excess.

    Why An even thickness means the cutlets cook through at the same rate, and the light flour coat gives you the golden crust and helps the sauce cling later.
  2. Heat 2 tablespoons of the butter and all of the olive oil in a large skillet over medium-high heat until the butter foams and the oil shimmers.

  3. Sear the chicken 3 to 4 minutes per side until deeply golden and cooked through. Work in batches if the pan is crowded, then remove the cutlets and set them aside.

    Why Crowding steams the meat instead of searing it, and you want that browned surface for both flavor and the fond that builds your sauce.
  4. Add the lemon juice, chicken stock, and drained capers to the same skillet, scraping up all the browned bits from the bottom. Simmer about 3 minutes, then whisk in the remaining 2 tablespoons of butter off the heat.

    Why Scraping up the fond dissolves the concentrated flavor into the sauce, and whisking the butter in off the heat emulsifies it into a glossy, unbroken finish.
  5. Meanwhile, cook the farfalle in well-salted boiling water until al dente. Drain it, reserving about 1/2 cup of the pasta water.

    Why Salted water seasons the pasta from the inside, and the starchy reserved water is your tool for loosening the alfredo to the right consistency.
  6. In a separate pan, saute the minced garlic in a little butter until fragrant, then add the cream and Parmesan and simmer until slightly thickened. Toss in the drained farfalle, loosening with the reserved pasta water as needed.

    Why The starchy water helps the cheese and cream coat every noodle instead of clumping, giving you a smooth alfredo rather than a greasy one.
  7. Plate the alfredo pasta, top with the seared chicken, spoon the warm piccata sauce over everything, and garnish with lemon slices and parsley.
